Game Day Vegan Dishes


With the Super Bowl right around the corner I thought I’d share some vegan recipes. If you’re attending or hosting this year’s Super Bowl party, you'll want to make sure you’re prepared to eat...vegan!


I am going to give you 4 easy vegan Super Bowl dishes that you can provide for the party.



Buffalo Cauliflower Bites


You can’t have a super bowl party without hot wings! Well in this case, buffalo cauliflower bites. BAKED. NO FRYING.



Ingredients:

[wet batter] -2 cups of flour

-1 cup of water

-2 tbsp buffalo sauce

-Garlic and onion powder to liking

-1tbsp Paprika

-Himalayan salt


[dry batter] -1 cup of flour

-Garlic and onion powder to liking

-1tbsp Paprika

-Himalayan salt

Directions:


1. Preheat oven to 425

2. Wash and break apart cauliflower

3. Dip in wet then toss in a ziplock filled with dry batter, place on baking sheet lined with foil or parchment paper.

4. Bake for 20 mins.

5. Remove from heat, toss in buffalo sauce then bake for another 10 mins.






BBQ Jackfruit Sliders

If you are near a market that has whole jackfruit be my guest, I prefer the alread prepared jackfruit, not because of the taste but because of the complexity of the natural fruit. Have you ever tried getting the meat out of those things? Things can get a little sticky, literally!



Ingredients:


-Jackfruit

-Non-dairy Hawaiian rolls (Archer Farms at Target or Sarah Lee)

-BBQ sauce

-Non-dairy butter


Directions:

1. Preheat oven to 300, warm jackfruit in pot with BBQ Sauce

2. Add jackfruit into Hawaiian rolls

3. Spread non-dairy butter over rolls

4. Place sandwiches on baking dish and bake for 10 mins

5. Remove and serve





Vegan Spinach Artichoke Dip


I’m a huge fan of chips and almost any kind of dip...but not all dips are vegan, so what do I always do when I can’t find a vegan option. I create one.


Ingredients:


-3 cups of spinach

-2 diced artichoke

-1/2 yellow onion

-3 cloves of garlic

-1 vegan cream cheese

-1 cup vegan mozzarella cheese

- a few pinches of salt, onion and garlic powder


Directions:


1. Add oil to pot & bring to medium heat. 2. Sauté onion and garlic in pot until onions become translucent.

3.Add spinach and cook until wilted

4. Add (v)cream cheese and (v)mozzarella cheese, artichoke, & seasonings.

5. Stir until creamy, remove from heat an serve.


Vegan Stuffed Jalapeños


These were by far the best stuffed jalapeños I’ve ever had. I was really tempted to make these into jalapeño poppers but I’m trying to limit our fried foods.



Ingredients:


[filling]

-5 jalapeño peppers

-chopped scallions

-2 tsp of paprika

-pinch of salt

-1/4 cup of (v)cream cheese

-4 tbsp of (v)mozzarella cheese

[toppings]

-panko crumbs


Directions:

1. Preheat oven to 400

2. Wash and cut jalapeños down the middle, remove seeds.

3. Mix all filling ingredients in bowl.

4. Add all ingredients inside peppers, place on baking sheet lined with foil or parchment paper.

5. Add panko crumbs and bake for 30 mins.



And there you have it folks, a menu for your next game day or whenever you're wanting some finger foods.
